The holiday fare isn’t always healthy.
Try these holiday salads which are diabetic friendly:

Cranberry Holiday Salad

Ingredients:
2 cups boiling water

2 small packages sugar-free cranberry gelatin
———
1 1/2 cups cold diet ginger ale
———
2 cups green or red grapes, cut in half
———
1 can (11-ounces) mandarin orange segments, well drained

1 cup chopped pecans
Stir boiling water into gelatin in a large bowl for 2 minutes or until completely dissolved. Stir in cold ginger ale. Refrigerate about 1 1/2 hours or until thickened.
Stir in grapes, oranges and pecans. Pour into a glass dish or a mold sprayed with no-stick cooking spray. Refrigerate 4 hours. Unmold. Very diabetic friendly.

Simply Healthy Holiday Salad

Ingredients
1 large can (2 cups) crushed pineapple in its own juice

2 cups buttermilk
———
2 small packages sugar-free lime gelatin
———
1 cup chopped pecans
Pour pineapple and its juice in a saucepan. Add buttermilk. Heat well. Add gelatin and mix until dissolved. Add pecans. Pour into a 9x12-inch glass baking dish and refrigerate until firm. Very diabetic friendly.
