* China Kitchen, 90-H Glenda Trace, Newnan, Ga., was inspected Aug. 8. Current score, 53, U. Inspector's comments: Employees must wash hands between tasks. Wash hands before prepping food, cooking, touching clean dishes. Employee drinks must be stored away from food service storage areas. Fish not from approved source -- discarded. Store personal food out of food service storage areas. Do not store raw meat or eggs over ready-to-eat foods. Keep foods covered in walk-in and reach-in coolers. Sanitize utensils, pots, pans, etc., between uses. Date-mark all food out of original container if being kept more than 24 hours. Label food out of original container with common name. Do not use cans for storage once opened. Store foods off the floor in walk-in. Do not stack pans of food without cover between. Store cloths in sanitizer between uses. Keep scoop handles up and out of food. Air-dry dishes prior to stacking. Use scoops with handles; no bowls. Remove tin foil from shelving. Use three-vat sink properly to wash dishes -- wash, rinse and sanitize. Clean gaskets of coolers. Wear gloves when handling ready-to-eat foods, washing vegetables, etc.
